The liquid's shape changes. Volume is the measurement of how much space an object takes up. Since you don't gain or lose any liquid when you pour it from the bottle to the pan (assuming you didn't spill any), the liquid's volume doesn't change. However, since liquid changes into the shape of its container, its shape changes as it goes from the tall bottle to the shallow pan.
